Good Day to turn venison into Summer Sausage, Sweet Italian sausage, and Brats. We did a 70/30 mix on the Summer Sausage with 2 flavors Blue Ribbon and Garlic Summer. The Brats were 50/50 Philly and mushroom. Currently smoking the Summer Sausage.

I got to be more careful when looking for sheds.
