Also, for the record, my two kids have killed 9 does and 0 bucks.....but not because I dictated a "doe only" hunt.
There is no right or wrong answer on how to raise your children to become great...

My 12 year old was pulling about 36 pounds last year. He was shooting 100 grain Slick Tricks and his arrow passed through the deer and stuck in the dirt on the other side of the deer.
I too, would recommend close range shooting to the youth.
I prefer not to comment on some of the opinions in this post.
The "rules" for me and my kids are very strict.....
Rule #1 - Lets have a great time hunting together and you decide what deer you want to shoot. Whatever you shoot, be proud of it and give thanks for the opportunity.

Re: Clover - mowing
I like to let it go after about the 3rd week of August. Growth really slows down with the cooler weather and I want it as thick as it can be going into Winter.
Fatboy gives you some great advise...I will second the shooting sticks and making them comfortable.
Keep it fun...the hunt is over when they say it's over.
