Ahhhh! Breakfast Sausage.

Sounds good! Do you mix your own seasoning or buy pre-packaged? If so what is the best you have found?
 
Fareway makes great seasoning. I've used their Brats seasoning too. I made my own yesterday. Actually stole the recipe from Alton Brown on the foodnetwork. He uses cayanne, crushed red pepper flakes, brown sugar, kosher salt, fresh pepper, sage, tyme, rosemary, and nutmeg. I winged it last year and it was pretty bland. This year I went with an official recipe and actually cooked a patty right when I finished to check taste. It's really good. I would recommend fresh herbs if you have them. My sage bush took a dump last year, so I had to use bottled sage and tyme, but have fresh rosemary. I made patties and used the foodsaver to vaccum seal them. Should be good for winter breakfasts for a while.
 
I did/do. I had 3 lbs of deer burger and usually double (3lbs) with pork shoulder/butt. Half and half mix. I asked if they had back fat too, but the guy at Fareway said they used it all the day before making sausages. Even just the pork shoulder added a great flavor.
