Holy Crap. That was the worst thing to look at after a 4-mile run today. Is that just flattened out meatloaf? Let me know what you find out about cooking that. When I finally get a wildfire assignment, that's going to be the first thing I cook up when I get back!

"Cook your Bacon Explosion at 225 degrees in a constant cloud of hickory smoke until your Thermapen gives an internal temperature reading of 165 degrees. Normally this will take about 1 hour for each inch of thickness, but that could vary depending on how well you maintain your fire and also how many times you open the smoker to take a peek. Mine took about 2.5 hours, which was right on target with its 2.5 inch diameter."
 
They are called fatties. The possibilities are endless as far as what you put in them. There is no such thing as a bad fattie! The breakfast ones that I've made with eggs, mushrooms, green peppers ect.. are in my opinion the best. The bacon weave is the hardest part for making one of these. Everything else is pretty simple. Just get a tube of Jimmy dean breakfast sausage, cut it open, flatten it out, put in anything you want. Throw it on the smoker for about an hour or until you have an internal temp of 165. Take it out and enjoy!
