Butchering Deer

Heck, I'd be happy if he could just get my knife that sharp. Bet it would take him longer than 8 minutes with my knife. LOL!
 
I think it may be a knife made by Havalon, they use replaceable surgical blades.

The guy is good, not questioning that!

I think one thing that helps is the deer appears to be fresh, still warm. I find it much easier to skin a warm deer.

I have a hoist system, skinned a warm deer with guts in it this year. I used a rope to tie on the hide, had a loop in it to put my foot through and step down. That was a MAJOR improvement in speed.
 
Looks like a Chicago Cutlery boning knife to me.

+1 on the boning knife...might be a victronix or dexter russell. Does anyone have any experience with those hooks? I've read somewhere that they work great but haven't looked into it further. That may soon change.

Or....I just need an apron like that in the butcher shop! :way:
