Does anyone have a good Canned Venison Recipe?

I pressure canned 7 quarts from the last doe I got. Great for making stews, chilis and bbq sandwiches. You'll typically find for quarts you need to pressure cook 90 minutes at 11 psi. I add a teaspoon of salt to the top. Just cube the venison up into one inch pieces and fill the jar up raw. Some people add beef buillon cubes or a piece of jalepeno, onion or a garlic clove. It's really up to you on what you add. Just don't deviate from the 90 minutes at 11 psi. Good luck and have fun.

I cut my roasts into 1" cubes, fill the jar with the cubes and add a slice of onion, a 1" cube of beef roast, and a teaspoon of salt. Its the most tender meat you'll ever have, and only takes five minutes to warm up!
 
The next deer I get (hopefully this afternoon) will go to canning.

We have added several different things over the last few years.

Last year we added about 12 to 18 morel mushrooms that we had dried then rehydrated by soaking in milk. That added a nice hint of mushroom flavor. We also added onion to a few and add a bunch (1.5tablespoons) of pepper in.

I make canned deer every year What I do is about the same only I don't put in any salt I just cut up the deer into 1" pcs. and pack in pint jars add a chunk of beef tallow (fat from around kidneys) on top of the deer put on the hot lid and ring put in pressure cooker bring up to 11 PSI of 90 minutes remove and set on 1x12 board let set overnight and then remove the rings and wipe off the jars and store basement. It's the best meat you'll ever eat.
To make barbeque deer take a jar of deer and heat it in a sauce pan add as much barbeque sauce to make it thick stirring it all the time and the meat will come apart into perfect string like pcs. to make wonderful sandwiches add a slice of cheese (I use Pepper cheese) and try not to eat the whole pan full.

I like to cut the deer into lengths that will allow them to JUST fit into the jar, anything smaller will crumble up too much. Longerr strips make excellent sammiches when BBQ is added. Hell, let's face it, any canned deer is damn good!
