Deer aging?

What is your opinion on hanging your deer to age the meat? How long do you age your deer? Have you ever detected any spoilage?

it all depends on the temperature outside. if the meat will cool down within a few hours period and stay cool i'll let them hang a day or so. if not, i try to get to the deer ASAP.

I have read in a few articles, the perfect temp for aging deer is 33 to 37 degrees, hang them up to 10 days. if temps agreed with me i would hang for a week. so far i get my deer early, when its still too warm for long time hanging. shoot'em up--eat'em up
