deer roast question

i'm making a deer roast for a work potluck. what's the proper temperature to bake at? 375?
 
I generally sear (sp) the roast in butter and a hot skillet. The put in a pot an fill about half way with water. Mix in 1 pouch of Lipton Beefy Onion soup mix. Bake at 375 for 3-4 hours. Check periodically. Put in onions,mushrooms, carrots, taters, etc about an hour before you are ready to eat. MMM MMM Good.
 
my recipe is take the roast and put in a roasting pan. little bit of water under the grate of the pan. put 2 packets of dry lipton french onion soup mix on the roast. roast covered for a couple hours. as the roast cooks it will self marinate as the water condensates on the lid of the roaster pan. then add as much carrots and potatos as you can fit in there with it along with one onion. bake until it's all finished. use the drippings for some gravy. i also sprinkle a smidge of lemon pepper seasoning on the potatoes and carrots. i am pretty sure at 375 for 4 or 5 hours.

My wife makes one that is similar, only thing different is she uses a can of coke in the bottom of the pan, instead of water. The acid in the coke breaks down the meat fibers, making the roast very tender.

I think the tastiest roasts on a deer come from the neck region. Enough marbling in the meat they are never dry and they are always tender. My favorite way is like someone else said, 1 can of cream of mushroom soup & 1 chopped onion and overnight in a crock pot.
