Eating deer this year? (EHD)

I have been wondering if it would be safe to still eat deer this year after alot of deer around here have been found dead. I would still like to make some jerky and sticks and eat some backstraps. I have been told that it cant be transfered to humans but have been also told not to eat them. Was wondering what you guys thought.

Seriously, my family eats a LOT of venison in the course of a year, and if I were near an infected area I'd be paying very close attention to how healthy the deer looked before harvesting them.

I don't see why it wouldn't be safe to eat, your processing and cooking all the meat obviously before you consume it. Once the meat is fully cooked i'd think any parasites or bacteria would be killed. I don't know too many guys who cook deer without fully cooking it. Not something like beef where I'd consume it half raw. Not to mention not all of the counties in Iowa were hit with EHD, as far as I know my counties in central Iowa no cases have been confirmed, could be wrong though.

I for one have never eating a fully cooked deer steak. Retter is Better.
 
X2, we always have our venison pretty rare also!!

X3! I have friends and family tell me I am crazy for eating venison rare. I just tell them it is no different than eating beef rare(not sure if I am correct or not) All I know it is wayyyyy better when there is some red in the middle and I have never gotten sick(knock on wood). More moist, tender, and flavorful if it is not well done.

Over cooked drys it out and makes it taste like shoe leather.

I agree it dries it out, but I've never eaten shoe leather so I wouldn't know about that:D From my understanding, ehd hits and kills fairly quickly, so if a deer has it, you'll know.
 
Once a hard frost hits, we should not have to worry about EHD as it will kill the flies. So, my personal stance until a hard frost his is to not eat any of those deer. It's not worth risking. Out of the 17 deer I have found, not a one had been touched by the coyotes, if the yotes arent eating them then neither am I. I shouldn't really have to worry about it though as I wont be able to hunt until late October.
 
Long time lurker, decided to register...

Never a good idea to eat a sick animal of any kind. That being said, EHDV is not transmissible to humans and it would be completely safe to consume. I'm making a distinction here between an animal infected with EHDV and a "sick" animal. They're not necessarily one in the same. Good luck
