Stuffed pheasant- turned out great!

Decided to try pheasant a new way tonight- took each breast and slit them open to make a pouch. Made stuffing and crammed as much in as I could- wrapped tightly with 2 pieces of thick applewood smoked bacon - 350 for 35 min- 10 more on broil to make bacon crispy- delicious! Served with curly fries and corn

I have yet to try pheasant (I know, I know, how can I be from Iowa and never had pheasant?!! Or went pheasant hunting?!!!), but this does sound pretty good. I've smoked some breasts for someone else, but didn't get to try them. Guess there wasn't enough to share! But next time, I'm told, I get one.
