Had a pretty sucessful honker hunt yesterday, was looking for some recipes to cook them up.. Usually I just grill them but the grill is currently not in working order, any suggestions for something ismple would be great
Place breast in baking dish. Fill bottom with chicken broth, cover all meat with liberal layer of good quality bacon. Cover with foil, bake at 350 for 1 hour. Have a nice piece of bacon with every bite! Between the broth and bacon fat the meat stays really moist.
smoked over apple wood and then thin sliced with a horseradish dip is tasty.
We used to make almost all of ours into summer sausage at the end of the season. It is pretty good and we would give a lot of it to the landowners for letting us hunt.
