I have yet to find a bean variety that deer don't like. The biggest challenge is getting them too maturity in high population areas.
Helping a contractor does not necessarily result in a cheaper bill. Often times they'd rather not have the "help". (not saying that is your scenario)
I can't say for sure about watercress but in my experience deer gravitate towards anything still green during the winter months.
