    We butchered a pasture raised Berkshire, keeping a whole hindquarter for smoking. Going low and slow. [​IMG]

    What is a pasture raised Berkshire?!?!? I'm sure it's delicious though!!

    Berkshire is a heritage breed of hog, redder pork than you find in the store with more marbling. Pasture raised, not in confinement, no hormones, no antibiotics, non-GMO feed.

    Started at 8:30 am, finished 1 am, 36 lbs going in. Tried to hover around 200F.
