The apple season has started so fall is close. I brought home two 5 gallon buckets of Red Rome's today. Made an apple pie and have a huge batch of applesauce in the oven.

Got a chicken on the rotisserie, mashed taters and gravy on the stove. Looks to be good time spent with the family this evening.
 
Just picked five buckets of apples off my tree and wondering what to do with them all. How about sharing your applesauce recipe and pie recipe with me for a little variety.

I'm gonna be real sick of peeling and coring so let's make something really good!
 
I cheated and used a store bought crust for the pie. The recipe was right out of Better Homes and Gardens cook book. I thinly sliced 10 apples after coring/skinning. I added 3/4 cup sugar, a teaspoon of cinnamon, two tablespoons flour, a dash of salt, dash of nutmeg, splash of lemon juice and mixed it up. I poured this into the bottom pie crust and topped it off with 4 pats of butter under the top crust. I cut slits in the upper crust, sprinkled washed raw cane sugar on top and baked it at 400F for 50 minutes.

I don't have an applesauce recipe, usually wing it. I cored and skinned a 5 gallon bucket of apples, halved to quartered them, then placed them in a stainless steel 16 quart pot. I added a quart of water and a half cup of sugar and a tablespoon of ground cinnamon. Usually, I like to use 3-4 cinnamon sticks, but I didn't have any on hand. I'll sweeten to taste after it cooks down, sometimes adding some of our honey to it. /forum/images/%%GRAEMLIN_URL%%/wink.gif I like my applesauce a little chunky. I like to make applesauce in the oven because it takes less attention, no chance of scorching it to the bottom of the pan if it isn't stirred enough.

Mom and Dad had an apple tree out on the street corner. Some type of mix, small, but the sweetest apples you ever bit into. Some years it was a challenge getting a good bunch because every one from town would be pick'n on their walk by. Made the best pies I've had.

That's what your post reminded me of.

After eating the rotisserie chicken, peas, mashed taters 'n gravy, and rolls, I didn't have room for pie (yet /forum/images/%%GRAEMLIN_URL%%/grin.gif). My oldest son wanted a piece of pie for dessert and I stole a bite. Yum! Sheer heaven.
