I'm with Limb, when there's a good skillet to eat, why eat a catfish?
 
i've often thought that the flathead catfish should be an independant catfish family since they aren't poop eaters like the rest of the catfishes. you havn't eaten great tasting catfish till you try a flathead!!

We run bank poles on the DesMoines River and catch a bunch of huge Flatheads. Beats the heck out of a Channel Cat anyday.

Most people try to fry catfish with way to thick of pieces also. Slice a little thinner and you will cook out alot of the fishy taste.
 
I prefer the flathead over any other fish that swims in Iowa for eating. We get them out of the cold deep water in the Missouri River. I don't even begin to put them in the same class as the channels and blues.
 
I have always picked up some rotten road kill on the way to the mouth of the cattaraugus creek that feeds in to lake erie. that always gets the big ones. I wouldn't ever eat anything outta lake erie though....
