Cover crops for soil building

I’ve got a 120x40ft garden I’m not going to plant any vegetables in this year. Thinking about planting something that will put some nutrients back in the soil. Anything I plant will be tilled back in. I considered doubling up on something like turnips/radishes, tilling them in, then replanting and tilling them in again next spring. Those 2 aren’t anything I typically plant and haven’t for years. My thought was that I could till in quite a bit of mass. My soil tested high for P and K while N was middling. Anyone have any suggestions on what I could plant? If I can find something that works well I may use it at the farm in the plots in future years. Thanks for any thoughts.

I bought some clover for just this purpose.
 
I did red clover, sweet clover, radishes, and volunteer winter wheat behind a winter wheat crop seeded in late July and went to corn the following year. The yield was significantly better than the rest of the field that didn’t get cover crop.
