Deer Loin Recipe

Might think I am crazy, but Shredder can vouch for me that the best recipe is this:

1/3 coffee grounds
1/3 Kosher salt
1/3 seasoning of your choice


Take loin and clean it till no trim is on it. Roll loin in mix, coating it very good. Seer it in very hot oil in skillet, until mix is "fryed" on good. Then put in glass dish and bake for 25 minutes on 350 degree. You want to eat it between medium rare and medium. Very good.
 
Limb - That sounds awesome! I'm always looking for a new one to try. On some other recipes with brown sugar I add a pinch or two of cayenne pepper or some red pepper flakes. Gives it the "kicked up" effect and balances out the sweet side.

Nanny - I've seen something like this before. One question though, do you use fresh coffee grounds right out of the can or used grounds out of the coffee pot?

heres something me and all my friends and family love.


Mix Honey and Original BBQ sauce in a bowl. Doesnt matter how much you use of each. some people like more honey than others. Just make enough to cover all of your deer steaks or loins.

Brown your steaks or loins on the the stovetop for 5 or 10 minutes.

Get a glass cooking pan "or whatever u wanna call it" Pour the Honey BBQ mix over the steaks or loins. Cook for 1 hour on 350. YUMMMMMMM. cant be beat. and very simple.
 
Coffee ground loin is awesome folks...I will have to try this new one as well.

Another one I got and used and love

Marinade the 1 inch thick loin in soy sauce, Olive oil and garlic powder for an hour or two and grill to a medium and it is as tender as they come. Great stuff as well.

Without sounding gay....what other recipes do you folks have for venison in general???

Deer stroganoff (sp?) and deer stir fry are two of my family's favorites. Easy to make and good for you too.

Cavenders Greek Seasoning salt. For just a season and grill steak. I'll season the chops and put them in the fridge for a few hours, excellent.
 
I'll have to try that marinade sometime...sounds like a winner.

Not sure about the coffee. So is there a coffee flavor once it's finished cooking?
 
one of my favorites

take a large chuck of deer loin, make a butterfly cut, lengthways, open halves of the loin, and pound to 1/2-3/4 inch thick, with meat tenderizer hammer.

in a skillet, saute morel mushrooms and onions in butter. (i have yet to try it with "store bought mushrooms" but i am going to give it a shot soon)

place meat on a cutting board. top with abut half of the onion/mushrooms, place 1-2 slices of swiss cheese on top of that. roll the meat tightly around the mixture, secure with cooking string (the kind they use to tie roasts (from meat dept).
place in a shallow baking dish, top with remaining mushroom/onions and a few more slices of swiss cheese. cover and bake at 350 until meat is done. cut strings, slice, and serve

YUUUUMMMM
