Season will be here soon and everybody will have more venison than they know what to do with. /forum/images/%%GRAEMLIN_URL%%/wink.gif

Bonker mentioned "lanjagers" in a post and I wasn't sure what it was, so I did a quick google search which turned up this Recipe Site. I thought maybe some would like to experiment a little this fall.

Bonker, why am I not surprised at how them things are made? /forum/images/%%GRAEMLIN_URL%%/grin.gif

Anything fermented is good stuff, wether its in a bottle, a can, or a casing.

I had no idea how they were made. Several years ago I was in Ruzikas and noticed a jar full of what looked like giant cat turds. I tried one and the caraway/coriander/smoke flavor was excellent.

You guys shoulda seen Muddy's face a few years ago when I tried to get him to eat one. As I recall he manned up and took a bite, but I don't think he finished it.

Even Ben likes 'em:

But I bet since Ruzikas is a Czeck name landsjager probably means Bohemie Beer Hunter Sausage.

I just go in to Ruzickas and buy them over the counter. They would be as dry as grandma if you used venison.

yep... looks like a nice healthy turd.. I never could acquire a taste for lanjagers. It basically tastes like dried up "nothing". I can't taste any seasoning in them or anything.. maybe it's just the way they were made... they were from Ruzikas though

He Blake, thanks for reminding everybody of the sausage seminar. It should be a good time for newbies or for veteran sausage makers. I helped Kieth with the booth down at the classic this past year and had a great time talking with people. Kieth is planning on starting with the basics but hopes to have other people share what works for them as well. The bar should be open and there will be great eats, hopefully people bring some of their own stuff for the contest.
