From time to time I will be adding a new dove recipe here. Please feel free to add your recipes. :way:




Doves with Bacon Cream Sauce

~ 6 - 8 doves
~ 12 - 16 slices of bacon
~ 3 egg yolks
~ 1 1/2 cups heavy cream
~ 1 teaspoon sweet Hungarian paprika
~ salt and pepper


Skin and clean doves.

In a large skillet saute' the bacon until just crisp. Drain on paper towels.

In the same skillet saute' the birds on all sides over medium heat in the bacon fat. Salt and pepper to taste. Pour off all the fat saving 3 Tbs.

Beat the egg yolks with the cream. Add the 3 Tbs of fat. Put the cream-egg-fat mixture back into the skillet and cook over low heat just to thicken, stirring constantly. (Make sure the mixture does not boil.

Stir in paprika and serve sauce in a gravy dish.

Garnish the doves with the crisp bacon.

Enjoy with mashed or fried potatoes and your favorite vegetable!





Marinated Grilled Dove


~ dove breasts
~ Italian dressing
~ red wine
~ beer
~ salt & pepper
~ seasoning salt
~ red pepper

In a bowl large enough to hold all of the dove you are going to cook, add equal amounts of Italian dressing and red wine. Add about half that amount of beer if you want.

Season to taste with salt & pepper, seasoning salt and red pepper.

Add the dove breasts. Cover and refrigerate for 4 - 5 hours.

Remove dove and save the marinade.

Grill dove over medium heat until golden brown.

In a pot large enough to hold the marinade and dove, bring the marinade to a boil.

Add the grilled dove. Reduce heat and simmer for 15 minutes.

Serve and enjoy!

Any recipe with beer has to be good! :D

But seriously, I've eaten them a bunch of times and they are tasty as hell! Looking forward to pursuing them this fall!
