Killer backstrap recipe!

Found this recipe on another site. Good lord is it good! You might want to go easy on the cream cheese. I put a little extra on thinking some would drip off while grilling but it never did.

-Cut straps into 3/4" fillets
-Pound with meat tenderizer
-Dip fillets in teriyaki/soy sauce marinade & dust w/ garlic powder & black pepper
-Spread cream cheese on one side of fillet
-Add onion & jalep. slices
-Roll up,wrap w/ bacon, and skewer
-Grill until bacon is almost done
-Add a slice of pepperjack cheese on top @ 5 min. before done.

P.S.- The original recipe never called for a few cans of Busch Light for the chef, but I found out that if you do add a can or two during the process it seems more like play and less like work! Enjoy........it's almost Spring!!

Tried it last night and it is awesome! A bit labor intensive in the preparation phase, but after substituting a good stiff whiskey for your Busch Light idea, did indeed find it to be much more like play than work. Thanks again...it really was excellent. Makes me anxious for a bunch of depredation tags again next fall.

Yes it is sort of a pain to get ready for the grill. That being said, I've got 3 more packages of loins that I can't wait to get to!

The original reicipe called for ground deer sausage to be put into the middle of the rolled up strap. But that seemed more than what was needed. Glad you like enjoyed it! /forum/images/%%GRAEMLIN_URL%%/wink.gif
