Blueberry Barbeque Sauce
1 tablespoon olive oil
¼ cup minced onions
1 tablespoon chopped fresh jalapeño peppers
1 pint fresh blueberries
3 tablespoons brown sugar – firmly packed
¼ cup rice vinegar
¼ cup ketchup
3 tablespoons Dijon mustard
1 teaspoon Tabasco sauce
4 tablespoons unsalted butter
Salt
Freshly ground pepper
Heat oil in large skillet. Add onions and jalapeño. Sauté until soft. Stir in blueberries, sugar, vinegar, ketchup, mustard, and Tabasco. Bring to a low boil and cook 15 minutes, stirring constantly. Transfer sauce to a blender and puree until smooth. Strain through a sieve into a small saucepan. Reheat. Add butter stirring until melted. Season with salt and pepper. Serve immediately. Yields 1 ½ cups
