Just wondering if a few of you guys would like to post some of your best recipes for chops and steaks.
 
An easy favorite of mine is simple.
crack a couple eggs, and whip them with a little milk. Crush some ritz crackers in a ziploc. Dip the steak cubes into the egg-milk mix then into the crushed Ritz crackers bag. Pull out when coated. Cook to medium rare and enjoy.

Many little variations can be done with this and all are yummy!
 
This is one of my favorites.

1. Take a back strap cut to 6-8" in length.
2. Next cut the strap down the middle so you have a top and bottom (Marinate if you like).
3. Next take a package of sausage (I like the spicy flavor) and mix with your favorite salsa. Make sure you mix well.
4. Then take 6-8 pieces of bacon and lay them out to make a blanket for the strap. I sometimes will rub the bacon with honey or brown sugar for a different taste.
5. Lay the bottom strap on the bacon and then begin to fill the stap with your sausage mixture.
6. When done place the top one the mixture, wrap with bacon, and secure with toothpicks.
7. Take the bacon wrapped strap to your grill and cook over medium heat until done. Throw some hickory chunks on for even better flavor. Usually takes around 30 minutes, just make sure you don’t over cook.
8. Slice and serve. No need to worry about left overs.

It takes some work, but it can't be beat. Throw some potatoes and onions in a foil pack on the grill to complete the meal.
