I spent the day with my wife's uncle and friends mixing up some deer/pork jalapeño cheddar summer sausage. We double ground 150 lbs of deer and 150 lbs of pork, mixed it in 25 lb batches, and stuffed it into casings. It will be cold smoked and hung out to dry for a while now.

Looks like you have the process down pretty good.

What's in the trashcan behind the hula hoop? Ping pong balls? Golf balls? Either way that's a bunch o' balls to go along with your sausage.
 
Makes my 5 gallon bucket of balls look tiny by comparison. (If you don't hit that softball outta the park somebody else better.)
