After seeing Shredders bluegill post, I thought I'd share a recipe I like for gills.
So many times a lake has such a stunted population of small gills it's a good idea to remove a bunch. But what to do with those small ones.
I first tried this years ago after reading it somewhere and it's quite good.
Filit the little guys out as best you can and cut meat into pieces about the size of your little finger if possible.
In a pan of boiling water, add some salt or other favorite seasonings.
Toss bluegill pieces into water and cook until done. This only takes a few minutes.
Take out and chill on ice immediately. Then put in fridge.
Get your favorite shrimp cocktail sauce and dip gills in it cold and enjoy.
This is really good and a whole lot cheaper than shrimp.

I'll be trying that, sounds like a tasty treat! I have a hard time in the summer deciding if the craw-dads we seine are going to be bait or supper too.
