need a new recipe

Going to grill some backstraps tomorrow night for a buddy, rather than do the "classic" preparation of medium rare seasoned with salt I'd like to try something different. Any suggestions? Only stipulation, has to be grillable. Thanks in advance.

I use a little MRS. Dash steak seasoning, throw some Lawry Salt in there and then put some A-1 on top and grill it all together, let A-1 set so it soaks in, put seasoned side down first on the grill and then season other side while on grill. Yuuuuuuuuuuuuuuuuuuuuummmmmmmmmmmmmmmmm

I just baked some loins that I had marinated in Italian dressing overnight. Nothing says I couldn't have grilled them. They turned out awesome after 30 minutes at 350F.

Muddy, Kat has an excellent recipe that I have tried in the past. It is excellent. If you give her a shout maybe she can send it to you. After marinating I think she does the cooking in the oven. I grilled it instead, and I thought it was great.

I screwed up- bought the wrong rub but used it anyway. Oklahoma Joe's Hog rub and yard bird seasoning wrapped in bacon on Weber grill. Stacked coals on side with a drip pan underneath for "indirect" grilling. Turned it once, bent my elbow numerous times while cooking. Yummy. Served with nettle salad (optional)

My favorite deer recipe: Marinade in equal parts soy sauce and balsamic vinegar, a splash of worchestershire, salt and fresh ground black pepper and a splash of extra virgin olive oil. Add some minced fresh garlic if you want. You can grill this or wrap bacon around it and bake it. Or marinate your steaks in it. Mmmmmmmm...

Soaking any meat in Italian dressing overnight will break help to tenderize meat and give it a tangy taste.

I like soaking mine in Italian overnight throw in tinfoil pan with onions/greenpeppers/potatoes cook in lots of butter. Season with garlic salt and seasoning salt. Might want to boil the potatoes first so they are soft. I cube mine in .5in pieces. Makes a nice meat and potatoes dinner, little bread/butter and some cold beer. Makes me wonder what the poor people eat on nights like that.

I've started wrapping them in bacon before grilling. Pin it on with toothpicks. The nice thing about that is you can grill them without drying out the meat, plus the bacon adds flavor to the steak. Try it once.

I went with the first suggestion since I was strapped for time, but the more replies the better, I plan on printing this thread out!

Muddy,
We Marinade some in balsamic vinegar last weekend and they were awesome! They were the most tender loins i have had!

Zesty Italian salad dressing is definately the way to go. But, try some teriyake(sp) sauce too.

I like to cut mine 1" thick, season lightly with Tex Mex steak season and wrap in hickory smoked bacon. Cover most of the steak, but don't put two layers of bacon. Only thing left is, crack a Busch Lite.

I like any of the 30 minute marinades you can pick up at the grocery store. Quick and easy and hardly any mess. I like the terayaki with sesame seeds and also any of the cajun marinades. I usually cut my loins in one inch cubes and marinade overnight in the fridge and then when I'm ready to grill put them on a skewer with pieces of bacon in between. Can't go wrong there.

Another easy recipe is taking Heinz 57 and honey in equal parts (sometimes I use a little more 57 than honey). It gives the meat a smokey yet sweet taste and glazes the meat as you're grilling. I also sprinkle some coarse ground pepper on as well. Keep some marinade back to baste while grilling and be careful because the natural sugars will cause flare ups!

I've also tried Kat's recipe, just this week in fact, and I love it. Just make sure you use a balsamic or port vinegar - don't use the distilled white or cider vinegar. It's not near as good.

Is this an overnight marinade and do you cut meat into small chunks for this one too and shishkabob?

You can overnight the meat if you want - I've done it as little as an hour and had good results. I've left the steaks whole and have cubed them up - either way works great. If you cube them up slap some bacon in between and there won't be any leftovers
